Royal Mail Hotel: Journey of a Dish
01 April 2012
I recently had the pleasure of making a 15 min documentary for Dan Hunter, the Executive Chef at famed Victorian restaurant, the Royal Mail Hotel. It was the opener for his presentation at the Melbourne Food and Wine Festival, supported by Tourism Victoria and Grampians Tourism.
The documentary investigates the origins of the key ingredients of three dishes and promotes the use of heritage produce grown and produced outside of the industrialised food production industry. It features interviews with Grampians producers including Grampians Pure Dairy, Mt Zero Olives Greenvale Farms and advocates such as Clive Blazey from Diggers and Rooney from Brambuk Cultural Centre.

I’ve almost finished a 26 minute documentary, Cross(X) Species Adeventure Club, here are some images from it. It follows New York based artist and engineer Natlalie Jermijenko from NYU’s Envionmental Clinic and Lab. Carbon Arts, a Melbourne based arts and environment organisation brought Natalie and Chef Mihir Desai to Australia for a series of events that explored issues of sustainability and biodiversity through unique food and cocktails creations. It was fun to shoot and looking forward to watching it as a complete piece – almost there :)
